Quick Chicken Pozole

  1. Heat oil in Dutch oven over med-high heat until shimmering.
  2. Add onion and cook until softened, about 3 minutes.
  3. Add garlic and chili powder and cook until fragrant, about 30 seconds.
  4. Add broth, tomatoes, hominy, and oregano and cook until tomatoes are soft and flavors meld, about 15 minutes.
  5. Add chicken and lime juice and cook until heated through, about 1 minute.
  6. Season with salt and pepper to taste and serve.
