Savory Chicken

  1. Preheat oven to 350u0b0.
  2. In a shallow plate, dredge chicken in flour.
  3. Shake off excess.
  4. In a large skillet, heat 2 tablespoons of olive oil.
  5. Quickly saute the chicken over medium-high heat, turning over once, until lightly browned.
  6. Remove to a 2-quart covered baking dish.
  7. Heat remaining oil in skillet.
  8. Over medium heat, saute onion, pepper strips and mushrooms, tossing occasionally, until onion is wilted and pepper strips are crisp-tender.
  9. Season with salt and pepper.
  10. Cover chicken with pepper mixture.
  11. Bake, covered, for 30 minutes.
  12. Uncover; bake 10 minutes more.
  13. Sprinkle parsley over all.
  14. Serve.
