Cranberry Delight Salad

  1. Combine pineapple juice and water to make 2 cups.
  2. Heat to boiling.
  3. Add Jell-O and stir to dissolve.
  4. Stir in cranberry sauce, lemon juice, peel and nutmeg.
  5. Chill until mixture thickens slightly.
  6. Add sour cream; stir until thoroughly combined.
  7. Fold in pineapple and pecans.
  8. Pour into an 8-cup mold.
  9. Chill until firm.
  10. Unmold onto a serving plate.
  11. Garnish with fresh strawberries and lemon twists, if desired.
  12. Yields 12 servings.
