Bran-Apple Muffins(Low-Fat)
- 1/2 c. buttermilk
- 1/2 c. prune or apple juice
- 1/2 c. bran cereal shreds
- 1/2 c. rolled oats
- 1 tsp. baking soda
- 2/3 c. pitted prunes
- 3 Tbsp. water
- 1/2 c. packed brown sugar
- 2 large egg whites
- 1 Tbsp. molasses
- 1 c. flour
- 1 c. peeled and grated apple, spooned, not packed, into cup
- 1/4 tsp. salt

- Preheat oven to 375u0b0.
- Coat twelve 2 3/4-inch muffin tin cups with vegetable cooking spray; set aside.
- In a small bowl, combine buttermilk, prune juice, bran, rolled oats and baking soda; set aside.
- In the container of food processor, combine the prunes and water.
- Pulse on and off until prunes are finely chopped.
- Combine prune puree and sugar in a mixer bowl; beat in egg whites and molasses.
- Stir in buttermilk mixture, flour, apple and salt; blend thoroughly.
- Spoon batter into prepared muffin tin cups, dividing equally.
- Sprinkle tops lightly with additional rolled oats.
- Bake for 20 minutes.
- Makes 12 muffins.
