Bran-Apple Muffins(Low-Fat)

  1. Preheat oven to 375u0b0.
  2. Coat twelve 2 3/4-inch muffin tin cups with vegetable cooking spray; set aside.
  3. In a small bowl, combine buttermilk, prune juice, bran, rolled oats and baking soda; set aside.
  4. In the container of food processor, combine the prunes and water.
  5. Pulse on and off until prunes are finely chopped.
  6. Combine prune puree and sugar in a mixer bowl; beat in egg whites and molasses.
  7. Stir in buttermilk mixture, flour, apple and salt; blend thoroughly.
  8. Spoon batter into prepared muffin tin cups, dividing equally.
  9. Sprinkle tops lightly with additional rolled oats.
  10. Bake for 20 minutes.
  11. Makes 12 muffins.
