Chicken Fettuccine
- 1 lb. boned, skinned breast, bite-sized pieces
- 1/2 c. chopped onion
- 1/4 tsp. dried basil
- 1/4 tsp. garlic powder
- salt and pepper to taste
- 1 tsp. minced garlic
- 2 c. sliced zucchini
- 4 c. hot cooked fettuccine
- 3/4 c. skimmed milk
- 3 Tbsp. fat-free chicken broth
- 1 (8 oz.) can mushrooms
- 1/4 c. Weight Watchers fat-free Parmesan cheese
- Spray a large nonstick frying pan with nonfat cooking spray. Saute onion and garlic in chicken broth.
- Add basil and other seasonings.
- Add chicken and saute about 7 minutes until chicken is cooked.
- Add zucchini and mushrooms.
- Saute until tender.
- Add the fettuccine and milk.
- Sprinkle the cheese on top and mix well. Yields 6 to 8 servings.
