Absolute Best New York Cheese Cake
- 1 lb. cottage cheese
- 2 (8 oz.) pkg. cream cheese, softened
- 1 pt. sour cream
- 4 eggs
- 1 1/2 c. sugar
- 1/4 lb. sweet butter or margarine
- 2 tsp. lemon juice
- 1/3 c. cornstarch (5 Tbsp. plus 1 tsp.)
- Melt butter.
- In food processor or blender, put small amounts of sour cream, cottage cheese and butter.
- Blend until smooth.
- Add cream cheese.
- Blend again.
- Add eggs, one at a time, while blending in rest of ingredients (lemon juice, cornstarch and sugar).
- Blend all together.
- Spray a spring-form pan with Pam or grease it.
- Pour batter into pan and bake on cookie sheet for 45 to 50 minutes at 350u0b0 until slightly brown on top.
- Let cool for 2 hours in oven.
- (If electric oven, door should be partially open.) Can serve plain or with fruit.
