Bunch Of Fruit Cake

• 2 c. all-purpose flour
• 1 1/3 c. sugar
• 2 tsp. baking powder
• 1 tsp. salt
• 8 1/4 oz. crushed pineapple, undrained
• 3/4 c. flaked coconut
• 3/4 c. miniature marshmallows
• 3/4 c. cooking oil
• 1 tsp. vanilla
• 1 tsp. pineapple extract
• 2 eggs
• 1 c. finely chopped apples
• 3/4 c. chopped dates
• 3/4 c. chopped nuts

1. Preheat oven to 325u0b0.
2. Grease pan with shortening.
3. Sprinkle with flour.
4. In a large bowl, blend flour, sugar, powder, salt, oil, pineapple, vanilla, extract and eggs.
5. Beat 3 minutes at medium speed. Stir in remaining ingredients.
6. Pour into prepared pan.
7. Bake 70 to 80 minutes or until toothpick inserted in center comes out clean.
8. Cool upright in pan 15 minutes.
9. Loosen edge of cake from pan. Cool on wire rack.
10. Cool completely. Glaze with Fruit Cake Glaze.
