Bunch Of Fruit Cake
- 2 c. all-purpose flour
- 1 1/3 c. sugar
- 2 tsp. baking powder
- 1 tsp. salt
- 8 1/4 oz. crushed pineapple, undrained
- 3/4 c. flaked coconut
- 3/4 c. miniature marshmallows
- 3/4 c. cooking oil
- 1 tsp. vanilla
- 1 tsp. pineapple extract
- 2 eggs
- 1 c. finely chopped apples
- 3/4 c. chopped dates
- 3/4 c. chopped nuts
- Preheat oven to 325u0b0.
- Grease pan with shortening.
- Sprinkle with flour.
- In a large bowl, blend flour, sugar, powder, salt, oil, pineapple, vanilla, extract and eggs.
- Beat 3 minutes at medium speed. Stir in remaining ingredients.
- Pour into prepared pan.
- Bake 70 to 80 minutes or until toothpick inserted in center comes out clean.
- Cool upright in pan 15 minutes.
- Loosen edge of cake from pan. Cool on wire rack.
- Cool completely. Glaze with Fruit Cake Glaze.
