Cinnamon Candy Pickles
- 15 large cucumbers (peel, core and cut in 1/2-inch thick long fingers)
- 2 c. lime
- 1 c. vinegar
- 1 1/2 oz. red food coloring
- 3 c. vinegar
- 11 c. sugar
- 1 (9 oz.) pkg. red hots
- 8 1/2 c. water
- 2 Tbsp. alum
- water to cover
- 3 c. water
- 8 cinnamon sticks
- Add lime to 8 1/2 cups water.
- Add cucumbers and soak 24 hours.
- Rinse 3 times to remove lime and leave in ice water for 3 hours.
- Drain.
- Combine 1 cup vinegar, alum and food coloring. Add cucumbers and cover with water.
- Simmer 1 hour.
- While mixture is simmering, mix 3 cups vinegar, 3 cups water, 11 cups sugar, cinnamon sticks and red hots.
- Boil until melted.
- Pour over drained cucumbers and let stand 12 hours.
- Heat to boiling.
- Pack in jars and seal.
