Cinnamon Candy Pickles

  1. Add lime to 8 1/2 cups water.
  2. Add cucumbers and soak 24 hours.
  3. Rinse 3 times to remove lime and leave in ice water for 3 hours.
  4. Drain.
  5. Combine 1 cup vinegar, alum and food coloring. Add cucumbers and cover with water.
  6. Simmer 1 hour.
  7. While mixture is simmering, mix 3 cups vinegar, 3 cups water, 11 cups sugar, cinnamon sticks and red hots.
  8. Boil until melted.
  9. Pour over drained cucumbers and let stand 12 hours.
  10. Heat to boiling.
  11. Pack in jars and seal.
