Ham And Cheese Omelet

  1. Combine eggs, salt,
  2. pepper
  3. and
  4. milk; whisk until egg mixture is blended.
  5. Heat an 8-inch Teflon skillet over medium heat until hot enough
  6. to
  7. sizzle a drop of water.
  8. Add canola oil,
  9. rotating pan to
  10. coat
  11. bottom
  12. with
  13. oil.
  14. Pour
  15. in
  16. egg mixture.
  17. As mixture starts to cook, gently lift omelet with a spatula and tilt
  18. pan
  19. so
  20. uncooked
  21. portion flows underneath. When done, sprinkle half
  22. of
  23. the omelet with the ham, cheese, onion and green
  24. pepper.
  25. Fold
  26. omelet
  27. in
  28. half and carefully remove to serving plate.
  29. Serves 1.
