House Jogger Chili
- 1 1/4 lb. extra lean ground beef
- 2 medium green peppers
- 2 large carrots
- 2 large white onions
- 1/2 lb. fresh mushrooms
- 4 jalapeno peppers
- 3 cloves garlic
- 1 (4 oz.) can yellow corn
- 2 (28 oz.) cans whole tomatoes
- 3 (16 oz.) cans dark red kidney beans
- 3 (8 oz.) cans tomato sauce
- 4 Tbsp. chili powder
- 2 tsp. salt
- In
- a
- wok or large frypan brown meat.
- Drain
- meat
- of excess grease, then set meat aside.
- Cut
- up
- all
- vegetables. Thin slice
- carrots diagonally about 1/4 inch
- thick.
- Put
- 3 tablespoons peanut oil in a wok or large Dutch oven or cooking pot.
- Add
- some
- of
- the cut up
- vegetables
- (green
- peppers, onions, jalapeno peppers and carrots).
- Stir-fry
- or saute for approximately
- 10 minutes.
- Keep stirring
- during
- this
- time. Add remainder of vegetables, other ingredients and meat to the pan. Bring to a boil and simmer for at least 2 hours.
