Bourbon Sweet Potatoes With Maple Syrup
- 8 medium sweet potatoes
- 1/2 stick butter or more (if necessary)
- 1 c. dark brown sugar
- 2 Tbsp. maple sugar or honey
- 1/2 c. fresh orange juice
- 1/4 c. bourbon
- 1 tsp. grated zest of orange
- Heat oven to 450u0b0.
- Peel the sweet potatoes.
- Cut into fourths or eighths, depending if sweet potatoes are too large.
- Brown well on all sides in a heavy skillet in the butter, about 20 to 30 minutes.
- Don't burn.
- Potatoes do not have to be fully cooked at this stage.
- Add more butter if necessary to prevent sticking. Arrange potatoes in a casserole that has a lid.
- Mix the sugar, maple syrup, juice, bourbon and zest.
- Pour over potatoes.
- Cover and bake 20 minutes, basting often.
- Makes 8 to 10 servings.
