Cajun Red Beans And Rice

  1. Sort and wash beans; place in a large Dutch oven.
  2. Cover with water 2-inches above beans.
  3. Let soak overnight.
  4. Add salt pork to beans; cover and simmer 45 minutes.
  5. Stir in onion, green onions, parsley, garlic salt, oregano, red pepper, hot sauce and tomato sauce; continue to cook 1 hour.
  6. Brown sausage and drain; add to bean mixture.
  7. Cover and simmer 45 minutes, adding more water, if necessary.
  8. Serve over rice.
  9. Yields 6 to 8 servings.
