Red Beans And Rice Creole Style
- 1 c. western dry red beans
- 4 c. water
- 1 lb. hot Italian sausage, cut into 1/2-inch slices
- 1/2 c. chopped onions
- 1 clove garlic, minced
- 1 tsp. salt
- 1/2 tsp. marjoram
- 1 bay leaf
- red and black pepper to taste
- 1 (28 oz.) can peeled tomatoes
- 1 c. uncooked rice
- 1/2 c. coarsely chopped celery
- 1 green bell pepper, coarsely chopped
- Wash beans. Soak beans in water overnight.
- Brown sausage in large saucepan or Dutch oven.
- Pour off all but 1 tablespoon fat. Add onions and garlic to pan and cook until tender.
- Add beans and soaking liquid, salt, marjoram, bay leaf and pepper.
- Cover and simmer 1 1/2 hours or until beans are almost tender.
