Red Beans And Rice Creole Style

  1. Wash beans. Soak beans in water overnight.
  2. Brown sausage in large saucepan or Dutch oven.
  3. Pour off all but 1 tablespoon fat. Add onions and garlic to pan and cook until tender.
  4. Add beans and soaking liquid, salt, marjoram, bay leaf and pepper.
  5. Cover and simmer 1 1/2 hours or until beans are almost tender.
