Light Beer Stew
- 1 lb. stew meat
- vegetable cooking spray
- 1 tsp. vegetable oil
- 1 c. chopped onion
- 1 (12 oz.) can light beer
- 2 bay leaves
- 1/2 tsp. dried whole thyme
- 1/2 tsp. ground pepper
- 1/4 tsp. salt
- 5 medium carrots, sliced
- 1/2 lb. mushrooms, sliced
- 2 tsp. cornstarch
- 2 Tbsp. water
- Cut meat into cubes.
- Coat heavy pan with cooking spray; add oil.
- Place over medium-high heat.
- When oil is hot, add meat; cook until well browned, turning to cook on all sides.
- Reduce heat to medium-low; add onion and cook until onion is tender and lightly browned.
- Stir in beer, spices, carrots and mushrooms; bring to a boil.
- Cover; reduce heat and simmer 1 to 1 1/2 hours. Combine cornstarch and water; stir until blended.
- Stir into meat mixture.
- Cook uncovered 10 minutes, stirring occasionally. Remove bay leaves before serving.
- Serves 4.
