Light Beer Stew

  1. Cut meat into cubes.
  2. Coat heavy pan with cooking spray; add oil.
  3. Place over medium-high heat.
  4. When oil is hot, add meat; cook until well browned, turning to cook on all sides.
  5. Reduce heat to medium-low; add onion and cook until onion is tender and lightly browned.
  6. Stir in beer, spices, carrots and mushrooms; bring to a boil.
  7. Cover; reduce heat and simmer 1 to 1 1/2 hours. Combine cornstarch and water; stir until blended.
  8. Stir into meat mixture.
  9. Cook uncovered 10 minutes, stirring occasionally. Remove bay leaves before serving.
  10. Serves 4.
