Texas Pecan Cake

  1. Pour lemon extract over pecans and let stand overnight. Cream sugar and margarine.
  2. Add eggs one at a time, beating well after each addition.
  3. Add dry ingredients a little at a time, mixing well.
  4. Add fruit and raisins that have been dusted with about 1 Tbsp. flour.
  5. Add pecans and stir with a spoon.
  6. Grease and line a tube pan with wax paper.
  7. Pour in batter.
  8. Bake at 250 degrees for 2-1/2 to 3 hours.
