The Fish Dish

  1. Set oven to 325u0b0.
  2. Clean fish and arrange in an 11 x 13-inch baking dish.
  3. Layer the fillet of sole over the haddock and scatter scallops over the top.
  4. Sprinkle the lemon pepper and a dash of milk over the top.
  5. Slice a 6 ounce package of Velveeta cheese and lay over the top of the fish.
  6. Combine the topping as follows:
  7. Crumble 1 1/2 rolls of Ritz crackers.
  8. Add garlic, sage and parsley.
  9. Toss together.
  10. Melt butter and sprinkle over top until you have a crumb mixture.
  11. Spread crumb topping over fish and bake for 40 minutes.
  12. If crumb mixture starts to brown, put aluminum foil over the dish.
  13. Enjoy!
  14. May be served with vegetable rice pilaf, broccoli and Chardonnay.
