Shrimp Scampi
- 4 small green onions, chopped
- 1/4 c. chopped fresh parsley
- 4 cloves garlic, minced
- 1 1/2 sticks margarine
- 2 lb. medium shrimp, peeled and deveined
- 4 Tbsp. dry white wine
- 2 Tbsp. fresh squeezed lemon juice
- 3/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- dash of ground red pepper
- In a large
- Teflon skillet, saute green onions, parsley and garlic in margarine until onions are soft.
- Reduce heat to low; add shrimp, stirring constantly.
- Cook 3 minutes and add remaining ingredients.
- Simmer
- 3
- more
- minutes.
- This can be served separately in a
- bowl
- or
- over
- cooked
- rice.
- It also makes a good appetizer
- by placing equal amounts of shrimp and sauce in individual serving bowls.
