Sicilian Meat Roll
- 2 eggs, beaten
- 3/4 c. bread crumbs
- 1/2 c. tomato juice
- 2 Tbsp. parsley
- 2 lb. ground chuck
- 6 oz. shredded Mozzarella cheese
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. minced garlic
- 8 slices boiled ham
- 3 slices Mozzarella, halved
- Combine beaten eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic.
- Brown ground chuck.
- Drain. Stir ground chuck into mixture.
- On waxed paper, pat meat into 12 x 10-inch.
- Arrange ham on top of meat and sprinkle shredded Mozzarella
- cheese.
- Roll up.
- Bake at 350u0b0 for 1 hour and 15 minutes. Remove from oven and top with cheese halves.
- Makes approximately 8 servings.
