Meat Loaf In A Potato Ring
- 1 lb. lean ground beef
- 1 (8 oz.) can tomato sauce with mushrooms
- 1/2 c. soft bread crumbs
- 1 egg
- 1/2 tsp. salt
- 1 small clove garlic, crushed
- 3 potatoes, pared and cut in 1/4-inch slices
- 1/4 c. chopped onion
- 1 (7 oz.) envelope brown gravy mix
- 1 c. water
- Combine beef, 1/2 cup tomato sauce with mushrooms, bread crumbs, egg, salt and garlic.
- Shape into a 7-inch round loaf in a deep 9-inch pie plate.
- Overlap potatoes in a ring around loaf; sprinkle with onions.
- Combine remaining tomato sauce, gravy mix and water.
- Pour over meat and potatoes.
- Bake at 375u0b0
- for 1 hour.
- Cover with foil and bake 15 to 20 minutes longer.
- Spoon off fat if necessary.
- Serves 4.
