Spiced Pumpkin Rolls
- 1 pkg. dry yeast
- 1/3 c. sugar, divided
- 3/4 c. warm water (105~ to 115~)
- 1 c. pumpkin, cooked and mashed or canned
- 1 Tbsp. pumpkin pie spice
- 3/4 tsp. salt
- 1 egg, lightly beaten
- 3 3/4 c. bread flour
- 1 c. whole wheat flour
- 2 Tbsp. bread flour
- Dissolve yeast and 1/2 teaspoon sugar in warm water in a large bowl.
- Let stand 5 minutes.
- Stir in remaining sugar, pumpkin and next 3 ingredients.
- Gradually stir in 3 3/4 cups bread flour and wheat flour to make a soft dough.
- Sprinkle 2 tablespoons bread flour evenly over work surface.
- Turn dough onto floured surface and knead until smooth and elastic (8 to 10 minutes).
- Place dough in a large bowl coated with vegetable cooking spray, turning to coat top.
- Cover and let rise in a warm place (85u0b0) free from drafts until dough is doubled in bulk.
