Vidalia Onion Casserole

  1. Preheat oven to 350u0b0.
  2. Melt butter in a large skillet.
  3. Add onions and cook 12 to 15 minutes or until tender and transparent. Saving some for topping. Sprinkle cracker crumbs in a greased 9x13 inch casserole dish to line bottom and sides.
  4. Layer cooked onions, soup and cheese in dish.
  5. Lightly season onion layer with salt. Beat together eggs, milk, salt and pepper
  6. and pour over layers.
  7. Sprinkle with reserved crumbs and extra cheese.
  8. Bake 30 to 45 minutes or until browned and bubbly.
  9. Serves 6-8.
