Vidalia Onion Casserole
- 1/2 c. butter or margarine
- 4 medium Vidalia onions sliced
- 12 saltine crackers, crushed
- 1 (10 3/4 oz.) can condensed cream of mushroom soup
- 6-8 oz. Cheddar cheese, grated plus, extra for topping
- Salt and pepper to taste
- 2 eggs
- 1/2 to 1 c. milk
- Preheat oven to 350u0b0.
- Melt butter in a large skillet.
- Add onions and cook 12 to 15 minutes or until tender and transparent. Saving some for topping. Sprinkle cracker crumbs in a greased 9x13 inch casserole dish to line bottom and sides.
- Layer cooked onions, soup and cheese in dish.
- Lightly season onion layer with salt. Beat together eggs, milk, salt and pepper
- and pour over layers.
- Sprinkle with reserved crumbs and extra cheese.
- Bake 30 to 45 minutes or until browned and bubbly.
- Serves 6-8.
