Mexican Pan Dulce(Mexican Sweet Buns)

  1. Dissolve the yeast in the water.
  2. Sift flour again with the sugar and salt into bowl.
  3. Add the yeast, butter and eggs; beat until smooth.
  4. Place dough in greased bowl; cover and let rise in a warm place until
  5. doubled in bulk (about 1 1/2 hours).
  6. Punch it down; turn out onto a lightly floured board and knead until smooth and elastic.
  7. Pinch off pieces of dough and shape into smooth rounded balls about 1 1/4 inches in diameter.
  8. Place balls of dough on a greased baking sheet about 2 inches apart.
  9. With the palm of your hand, press each ball down to flatten it slightly. Gently spread about 1 tablespoon topping on each bun and then let buns rise until doubled in bulk, about 30 minutes.
  10. Bake in a hot oven (400u0b0) for 10 minutes or until lightly browned.
  11. Serve warm. Makes about 18.
