Cactus Cones

  1. Combine ground beef, egg, milk, rice, green pepper, 2 teaspoons taco or enchilada mix and salt.
  2. Shape meat mixture into 8 cones.
  3. Brown cones on all sides in cooking fat.
  4. Combine tomatoes, tomato juice and remaining enchilada sauce mix in deep pan.
  5. Bring to a boil.
  6. Place cones (pointing up) in sauce.
  7. Cover and cook slowly for 1 1/2 hours.
  8. Remove cones to warm serving dish.
  9. Thicken sauce with flour, if desired, and spoon over cones. Makes 8 servings.
