Cactus Cones
- 2 lb. ground beef
- 1 egg, beaten
- 1/2 c. milk
- 1/2 c. uncooked rice
- 1/2 c. chopped green pepper
- 1 (1 1/2 to 1 5/8 oz.) pkg. taco or enchilada sauce mix
- 2 tsp. salt
- 3 Tbsp. cooking fat
- 1 (16 oz.) can tomatoes
- 1 (13 1/2 oz.) can tomato juice
- flour for sauce, if desired
- Combine ground beef, egg, milk, rice, green pepper, 2 teaspoons taco or enchilada mix and salt.
- Shape meat mixture into 8 cones.
- Brown cones on all sides in cooking fat.
- Combine tomatoes, tomato juice and remaining enchilada sauce mix in deep pan.
- Bring to a boil.
- Place cones (pointing up) in sauce.
- Cover and cook slowly for 1 1/2 hours.
- Remove cones to warm serving dish.
- Thicken sauce with flour, if desired, and spoon over cones. Makes 8 servings.
