Apple Cake
- 3 c. all-purpose flour
- 1 Tbsp. baking powder
- 2 c. plus Tbsp. sugar, divided
- 1 c. applesauce
- 4 eggs
- 1/3 c. orange juice
- 3/4 tsp. salt
- 2 1/2 tsp. vanilla
- 4 medium baking apples, cut
- 2 tsp. ground cinnamon
- Combine flour, baking powder, 2 cups sugar, applesauce, eggs, orange juice, salt and vanilla.
- Beat until combined.
- Use another bowl, toss apples with cinnamon and rest of sugar.
- Use a greased 10-inch tube pan.
- Spread 1/3 of batter.
- Cover with 1/2 of apples. Repeat layers.
- Spoon remaining batter on top.
- Bake at 350u0b0 for 1 1/2 hours or until done.
- Let cool in pan 20 minutes before removing from pan.
- Just before serving, dust with confectioners sugar (optional).
