Tamale Pie
- 3 Tbsp. chili powder
- 3/4 c. yellow cornmeal
- 1 1/4 c. milk
- 1 egg, beaten
- 1 lb. ground beef
- 1 small onion
- 2 cloves garlic
- 1 (16 oz.) can tomatoes
- 2 c. whole kernel corn
- 1 c. cooked pinto or kidney beans
- 1/2 c. ripe black olives, drained
- 1 c. grated Cheddar cheese
- Mix together cornmeal, milk and egg.
- Brown the meat; add onions and garlic.
- Continue to saute until onions are soft.
- Stir in chili powder, tomatoes, corn, beans and olives.
- Heat for 5 additional minutes.
- Stir in the cornmeal mixture.
- Place in a 2 1/2-quart casserole and bake for 1 hour and 15 minutes at 350u0b0. Sprinkle cheese on top and bake for 5 more minutes until cheese melts.
- Serves 6 to 8 for brunch, lunch or as dinner.
- Serve with wilted spinach salad, broccoli spears and avocado slices.
