Pasta With Pesto
- 1 lb. garlic and parsley angel hair pasta or any other
- 4 oz. fresh basil
- 1 c. fresh grated Parmesan cheese
- 1/2 c. pine nuts or walnuts
- 1 c. olive oil
- 1/2 c. sun-dried tomatoes
- 1 c. sliced mushrooms
- 2 cloves garlic
- 1/2 lb. shrimp or chicken, cooked
- 1 large can crabmeat
- 1 Tbsp. olive oil
- In blender, put fresh basil leaves without stems.
- Add Parmesan cheese, pine nuts, olive oil and garlic to make a smooth sauce.
- Boil pasta (al dente) right before tossing with the sauce. Heat olive oil in a pan.
- Saute mushrooms, sun-dried tomatoes and choice of meat.
- Before putting sun-dried tomatoes in the pan, rehydrate by simmering in water about 5 minutes.
- Toss with hot pasta.
- Serve immediately.
