Chicken Enchilada
- 3 c. diced boneless chicken breast
- 12 tortillas
- 2 c. Cheddar cheese
- 2 c. Monterey Jack cheese
- 1 small can green chiles, diced
- 1/2 green pepper, diced
- 1/2 onion, diced
- 1 can sliced black olives
- chopped up jalapeno peppers
- 2 cans cream of chicken soup
- 1 large container sour cream
- In a 9 x 13-inch pan put the following:
- rolled up tortillas with microwaved chicken, most of cheese, green pepper, onion and olives.
- Continue until all tortillas are filled and in pan.
- Pour soup, sour cream, green chiles and jalapeno peppers in separate bowl.
- Mix with spoon.
- Pour over tortillas.
- Put rest of cheese and olives on top.
- Bake at 350u0b0 for 20 to 30 minutes.
