Banana-Nut Roll

  1. Cream butter
  2. and sugar, beating well at medium speed of an electric mixer.
  3. Add eggs,
  4. 1

  8. beating
  9. well. Combine flour, soda and salt; add to creamed mixture alternately with buttermilk, beginning
  10. and
  11. ending
  12. with flour mixture. Stir in banana, pecans and
  13. vanilla.
  14. Spoon
  15. batter
  16. into
  17. 3 (1 pound) greased and floured coffee
  18. cans.
  19. Bake
  20. at
  21. 350u0b0 for 55 minutes or until a wooden
  22. pick
  23. inserted
  24. in
  25. center comes out clean. Cool in cans 10
  26. minutes;
  27. remove to wire rack and cool completely.
  28. Yields 3 loaves.
