Pepperminties
- 1 3/4 c. plain flour
- 1 c. sugar
- 1/2 c. margarine or butter
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 large egg
- 1 1/4 tsp. vanilla
- 1 c. confectioners sugar
- 1/4 lb. peppermint candy
- Two hours before serving or early in the day:
- Into large bowl, measure flour, sugar, margarine, baking powder, salt, egg and 1 teaspoon vanilla.
- With mixer at low speed, beat ingredients until well blended.
- Shape into ball.
- Preheat oven to 325u0b0.
- On lightly floured surface, roll half of dough in 12 x 6-inch rectangle.
- Cut lengthwise into 4 strips, then cut each strip crosswise into 6 pieces.
- Place rectangles about 1 inch apart on ungreased cookie sheet.
- Bake 12 to 14 minutes until lightly browned.
- Remove to wire racks to cool.
- Repeat with remaining dough.
