Slim 'N Trim Macaroni And Cheese
- 3 1/2 c. cooked, drained macaroni
- 1/2 c. chopped onion
- 1 3/4 c. low-fat cottage cheese
- 2 tsp. Dijon mustard
- 1 slice crisp cooked bacon
- 7 oz. sharp shredded cheese
- 3 Tbsp. chopped parsley
- 1/2 c. evaporated skim milk
- salt and pepper to taste
- 1 slice bread, crumbled
- 3 Tbsp. Parmesan cheese
- Preheat oven to 350u0b0.
- In a large bowl combine macaroni, sharp cheese, onion and parsley. In blender combine cottage cheese, milk and mustard.
- Process until smooth.
- Pour over macaroni mixture and stir.
- Add salt and pepper.
- Turn into 2-quart casserole coated with nonstick spray.
- Crumble bacon and mix with bread crumbs and Parmesan cheese.
- Sprinkle over casserole.
- Bake for 20 minutes.
- Yields 8 servings.
