Strawberry Swirl Salad Squares
- 2 (3 oz.) pkg. strawberry gelatin
- 2 c. boiling water
- 2 (10 oz.) pkg. frozen, sliced strawberries with sugar added
- 1/2 c. water
- 2 (3 oz.) pkg. cream cheese, softened
- 1/4 c. milk
- 2 Tbsp. mayonnaise or salad dressing
- lettuce leaves
- fresh strawberries, if desired
- In a large bowl, dissolve gelatin in 2 cups boiling water.
- Add frozen strawberries.
- Stir to thaw strawberries, using a large fork to break up frozen berries.
- Stir in 1/2 cup water.
- Turn mixture into an ungreased 8-inch square baking dish.
- Refrigerate until partially set.
- In a small bowl, beat cream cheese and milk with electric mixer on medium speed until fluffy.
- Beat in mayonnaise or salad dressing.
- Spread cream cheese mixture on top of gelatin. Cut through cheese mixture with a knife to create a marbled effect. Refrigerate until set.
- Arrange lettuce leaves on salad plates. Cut salad into squares and serve on lettuce-lined plates.
- Garnish with fresh strawberries, if desired.
- Makes 9 servings.
