Stifado

  1. Cut beef into small pieces.
  2. Dice onion.
  3. Saute beef in oil. Add onion and saute together for three minutes.
  4. Add tomatoes, vinegar, wine, bay leaves, salt, pepper, nutmeg, cinnamon, paprika, parsley and 2 cups warm water.
  5. Cook on low heat for 2 1/2 hours. Peel onions and carve them like cross.
  6. In a pan melt butter; add 1 cup water.
  7. Add onions, garlic and salt.
  8. Cook on low heat until water is gone.
  9. Add onions to the beef and cook for the last 30 minutes of cooking.
  10. Serves 4 to 5.
