Rice Supreme
- 1 1/2 to 2 lb. chicken parts, seasoned with salt, pepper and garlic salt
- 4 c. Uncle Ben's converted rice
- 9 c. broth from chicken, combined with water if necessary
- 1/4 to 1/2 tsp. saffron
- 1 c. mayonnaise
- 1 (12 oz.) pkg. shredded Mozzarella cheese
- Boil chicken parts; remove from pot, reserving broth.
- Cool and debone chicken.
- Break chicken up into large pieces; set aside.
- Cook rice in chicken broth and water, adding saffron. (Rice should be bright yellow in color.) Taste liquid and season with additional salt only if necessary.
- (Rice should be thoroughly done.)
- Place half the cooked rice in a casserole dish. Spread chicken over layer of rice; top chicken with remaining rice.
- Spread mayonnaise on top of last layer of rice.
- Cover with cheese.
- Bake in 350u0b0 oven until cheese is almost melted.
