Chicken Apple Casserole

  1. Boil potatoes and yam, mash together with milk until creamy. Add salt to taste and set aside. Optional: Add applesauce.
  2. Cube chicken.
  3. Crush garlic and chop.
  4. Combine olive oil, garlic, ginger, onions and saute in large pan for 3 minutes.
  5. Add squash, diced carrots, water, and bouillon cube. Continue cooking until chicken and vegetables are tender and done. Approx 20 minutes.
  6. Peel, core and dice apple.
  7. Dilute cornstarch in apple juice and add to chicken mixture.
  8. Add diced apple to pan with chicken. Saute 5 minutes.
  9. Pour mixture into a medium baking dish.
  10. Cover with mashed potato mix and bake at 350u0b0F for about 20 minutes.
  11. Brown top before removing and serve warm.
