Trade Wind Salad
- 2 c. uncooked macaroni
- 1 Tbsp. margarine
- 2 Tbsp. brown sugar
- 1 (12 oz.) can luncheon meat
- 1 (15 1/2 oz.) can pineapple chunks
- 2 Tbsp. pineapple juice, drained from pineapple
- 1 c. cubed cheese
- 1/2 c. chopped green pepper
- 1/2 c. mayonnaise
- 1 (8 oz.) container sour cream or pineapple yogurt
- 1/2 tsp. salt
- Melt margarine with brown sugar in large skillet.
- Add cubed lunch meat.
- Cook and stir until golden brown.
- Cook macaroni. Mix cooked meat, cooked macaroni, pineapple, cheese and green pepper in a large bowl.
- Mix mayonnaise, sour cream (or yogurt), pineapple juice and salt together well.
- Add to meat and macaroni mixture.
- Mix well.
- Chill thoroughly.
- Serve on lettuce if desired.
