Spinach Quiche
- 1 (9-inch) pie shell, unbaked
- 2 Tbsp. butter
- 1/2 lb. sliced bacon or ham
- 1 c. Swiss cheese, grated
- 1 c. Mozzarella cheese, grated
- 4 eggs
- 1 c. heavy cream or milk
- 1/8 tsp. nutmeg
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1/4 c. bell pepper, chopped
- 1/4 c. pimiento or red bell pepper, chopped
- 1 medium onion, finely chopped
- 1 pkg. frozen spinach, chopped
- Cook chopped spinach as per directions on package.
- In heavy skillet, cook with butter the sliced bacon or chopped ham, the onion, bell pepper and pimiento.
- Cook until crisp and golden. Drain well, then cover bottom of pie, spreading the already-sauteed ingredients.
- Put it in the oven to cook the pie crust a little.
