Everyday Vegetable Soup

  1. Saute onions and garlic in olive oil for 3-4 minutes.
  2. Add the sliced button mushrooms, stir, and saute for 1-2 minutes.
  3. Add vegetables, water and vegetable cube, stir, and bring the soup to a boil. Reduce the flame and cook, covered, until vegetables are tender, 15-20 minutes or until cauliflower is tender.
  4. Serve sprinkled with a lot of Parmesan cheese.
