Saucy Prune Cake
- 3 eggs
- 1 c. oil
- 2 c. sugar
- 1 c. buttermilk
- 1 tsp. soda
- 2 c. flour
- 1 tsp. baking powder
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1 c. chopped pecans
- 1 c. chopped, cooked prunes
- 1/4 c. prune juice
- 1 tsp. vanilla extract
- Sauce
- Combine eggs, oil and sugar in large mixer bowl; mix well.
- Mix buttermilk and soda in cup.
- Sift flour, baking powder, nutmeg, cinnamon and cloves into bowl.
- Stir in pecans.
- Add flour mixture to egg mixture alternately with buttermilk, mixing well after each addition.
- Mix in prunes, prune juice and vanilla.
- Spoon into greased tube pan.
- Bake at 325u0b0 for 45 to 50 minutes or until toothpick inserted near center comes out clean.
- Invert onto serving plate.
- Pour sauce over cake immediately.
- Yield:
- 16 servings.
