Clay'S Jail House Chili
- 1 lb. chili ground beef
- 1 lb. lean beef, cubed
- 1 lg. onion, chopped
- 4 cloves garlic, minced
- 4 jalapenos,chopped
- 4 Tbsp. mild chili powder
- 1 Tbsp. cumin
- 1 Tbsp. oregano
- 28 0z. plum tomatoes, crushed and well drained
- 4 c. beef stock
- Salt to taste
- 1- 16 0z. can dark red kidney beans, rinsed
- cayenne pepper to taste
- In Dutch oven over medium heat, brown meat until all pink color is gone.
- Add onion, garlic, jalapenos, chili powder, cumin, oregano.
- Cook about 20 minutes until vegies are very tender. Stir in tomatoes.
- Add beef stock, bring to a boil.
- Reduce heat. Add kidney beans.
- Simmer 1 1/2 hours.
- Add cayenne pepper to taste.
- Serve hot with flour tortillas.
