Curried Rice Salad

  1. Soak raisins in boiling water for 20 minutes.
  2. Saute almonds in margarine until crisp; drain and reserve.
  3. Combine next 9 ingredients.
  4. Stir hot rice into the dressing.
  5. Fold in bell pepper, green onions, raisins and coconut.
  6. Chill.
  7. Just before serving, fold in almonds.
  8. Makes 6 to 8 servings.
