Curried Rice Salad
- 1 c. chopped almonds
- 1 Tbsp. margarine
- 1/3 c. mayonnaise
- 1 clove garlic, chopped
- 1 Tbsp. curry powder
- 1 Tbsp. lemon juice
- 1/2 tsp. cumin powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. coriander
- 2 drops red hot sauce
- 3 c. hot, cooked rice
- 1/2 red bell pepper, chopped
- 1/2 c. sliced green onion
- 1/2 c. raisins
- 1/4 c. shredded coconut
- Soak raisins in boiling water for 20 minutes.
- Saute almonds in margarine until crisp; drain and reserve.
- Combine next 9 ingredients.
- Stir hot rice into the dressing.
- Fold in bell pepper, green onions, raisins and coconut.
- Chill.
- Just before serving, fold in almonds.
- Makes 6 to 8 servings.
