Dill Dip(For Veggies)
- 2/3 c. mayonnaise
- 2/3 c. sour cream
- 1 Tbsp. dehydrated onion
- 1 Tbsp. parsley
- 1 tsp. dill weed
- 1 tsp. Beau Monde or Bon Appetit seasoning
- 1 c. plus 1 Tbsp. flour
- salt to taste (if desired)
- 1 Tbsp. corn, peanut or vegetable oil
- 3/4 c. beer, at room temperature
- 2 Tbsp. lukewarm water
- 1 egg, separated
- 3 c. cooked rice
- 1 1/4 c. minced onion
- 2 tsp. Cajun seasoning (recipe tested with Tony Chachere's seasoning)
- 1 1/2 c. light sour cream
- 1 (8 oz.) pkg. light cream cheese, softened
- In a large bowl, combine rice, onion, Cajun seasoning, sour cream and cream cheese.
- Blend with an electric mixer until smooth.
- Chill 8 hours or overnight.
- Serve with chips, crackers or raw vegetables.
- Makes about 6 cups.
