Zesty Tuna Salad

  1. Cut off and discard the large (tasteless) base of the celery stalks and chop the remainder into small pieces, including the leaves.
  2. Use a red bell pepper if possible.
  3. (Yellow will do and green is okay, if the others are not available.)
  4. Cut the pepper into small cubes.
  5. The important thing for this salad is to blend all of the ingredients thoroughly.
  6. Drain the tuna and place in a large salad bowl (you'll need room for blending).
  7. Blend in the lime juice, then the horseradish.
  8. Mix thoroughly.
  9. Blend in the sweet relish.
  10. Add the parsley, onions, celery and bell pepper, one ingredient at a time, and mix thoroughly after each addition. Serve with your favorite crackers and beer.
  11. This recipe will serve, all by itself, as a hardy meal for 2 hungry adults.
  12. Any leftovers can be safely stored in the refrigerator for a couple of days.
