Zesty Tuna Salad
- 1 (12 1/4 oz.) can chunk light tuna, packaged in water
- juice of 1 fresh lime
- 2 heaping Tbsp. fresh prepared horseradish
- 1 medium-size bell pepper
- 3 heaping Tbsp. sweet relish
- 1 c. fresh, chopped parsley
- 6 to 8 green onions, chopped
- 4 celery stalks with leaves
- Cut off and discard the large (tasteless) base of the celery stalks and chop the remainder into small pieces, including the leaves.
- Use a red bell pepper if possible.
- (Yellow will do and green is okay, if the others are not available.)
- Cut the pepper into small cubes.
- The important thing for this salad is to blend all of the ingredients thoroughly.
- Drain the tuna and place in a large salad bowl (you'll need room for blending).
- Blend in the lime juice, then the horseradish.
- Mix thoroughly.
- Blend in the sweet relish.
- Add the parsley, onions, celery and bell pepper, one ingredient at a time, and mix thoroughly after each addition. Serve with your favorite crackers and beer.
- This recipe will serve, all by itself, as a hardy meal for 2 hungry adults.
- Any leftovers can be safely stored in the refrigerator for a couple of days.
