Bahian Shrimp Muqueca(Muqueca De Camarao)
- 2 Tbsp. dende oil
- 1 large yellow onion, finely chopped
- 3 cloves garlic, crushed
- 2 lb. fresh medium-sized prawns, shelled and deveined
- 1/2 tsp. salt
- 2 Tbsp. fresh lemon juice
- 4 large tomatoes, peeled, seeded and chopped
- 2 Tbsp. Italian parsley, chopped
- 1 tsp. black pepper
- 1 fresh red hot cayenne pepper
- 1 can coconut milk (14 fluid oz.)
- Heat the oil in a medium-sized pot and stir-fry the onion until golden brown.
- Add the garlic and prawns.
- Stir-fry for 3 minutes. Add the salt, lemon juice, tomatoes, parsley, pepper, cayenne and coconut milk.
- Simmer for 5 minutes.
- Serve with Brazilian Rice with coconut milk.
- Serves 4 to 5.
