Three Cheese Manicotti
- 1/4 c. chopped onion
- 1 clove garlic, minced
- 1 Tbsp. cooking oil
- 1 (16 oz.) can chopped tomatoes
- 1 (8 oz.) can tomato sauce
- 1 tsp. sugar
- 1 tsp. oregano
- 1/4 tsp. thyme
- 1 small bay leaf
- 8 manicotti shells
- 2 beaten eggs
- 2 c. grated Mozzarella cheese
- 1 1/2 c. Ricotta cheese or creamed cottage cheese
- 1/2 c. Parmesan cheese
- 1/4 c. snipped parsley
- For sauce, in a 2-quart saucepan cook onion and garlic in hot oil until tender.
- Add undrained tomatoes, tomato sauce, sugar and 1 teaspoon oregano, thyme and bay leaf.
- Bring to boiling and reduce heat.
- Simmer, uncovered, for 20 to 25 minutes, or until thickened.
- Remove from heat, discard bay leaf.
