French Sponge Cookies

  1. Preheat oven to 350 degrees.
  2. Lightly coat 2 cookie sheets with vegetable cooking spray.
  3. Sift flour, baking powder and salt together.
  4. Beat egg yolks with extracts in a mixer bowl until pale and thick.
  5. In a clean mixer bowl, with clean beaters, beat egg whites to soft peaks.
  6. Beat in sugar 1 T. at a time, until stiff and glossy.
  7. Gently fold egg yolks into egg whites.
  8. Fold in dry ingredients until just blended.
  9. Drop by level tablespoonfuls 2 inches apart onto prepared cookie sheets.
  10. Bake 10 minutes or until golden.
  11. Carefully transfer to wire racks to cool completely.
