Chicken Enchiladas
- 1 chicken, cooked and cubed
- 1/2 c. butter
- 1/2 c. flour
- 8 oz. can tomato sauce
- water
- chili powder
- cayenne pepper
- 1 pkg. tortillas
- 1 c. grated cheese (Cheddar and American)
- Melt butter in saucepan
- over
- low heat.
- Add flour and stir until smooth.
- Addtomatotauce and stir.
- Sauce should be thick, but not
- stiff.
- Add
- waterto desired consistency. Season with chili powder and cayenne pepper to taste.
- Mix 1/4 cup sauce with chicken.
- Fill
- tortillas with chicken mixture. Roll up and place in rectangular casserole dish.
- Pour remaining sauce over tortillas
- and
- sprinkle
- with cheese.
- Bake at 350u0b0 until cheese is melted and chicken is heated throughout.
