Chicken Enchiladas

  1. Melt butter in saucepan
  2. over
  3. low heat.
  4. Add flour and stir until smooth.
  5. Addtomatotauce and stir.
  6. Sauce should be thick, but not
  7. stiff.
  8. Add
  9. waterto desired consistency. Season with chili powder and cayenne pepper to taste.
  10. Mix 1/4 cup sauce with chicken.
  11. Fill
  12. tortillas with chicken mixture. Roll up and place in rectangular casserole dish.
  13. Pour remaining sauce over tortillas
  14. and
  15. sprinkle
  16. with cheese.
  17. Bake at 350u0b0 until cheese is melted and chicken is heated throughout.
