Country Fair Cookies
- 2 c. flour
- pinch of salt
- 1 c. seedless raisins
- 1 c. water
- 1 1/2 c. sugar
- 2 c. uncooked quick oats
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 c. vegetable shortening
- 2 eggs
- 1 tsp. vanilla
- Sift flour, soda, salt, cinnamon and nutmeg onto waxed paper. Combine raisins and water in small saucepan, bring to boil.
- Remove from heat, cover.
- Cool to room temperature.
- Beat shortening and sugar well.
- Beat in eggs and vanilla.
- Blend flour mixture until smooth.
- Add cooled raisins with the liquid and oats.
- Mix well. Cover bowl.
- Chill at least 1 hour.
- Drop cookies from rounded teaspoonful onto lightly greased cookie sheet about 2 inches apart. Bake in a 350u0b0 oven for 10 minutes or until evenly browned.
- Cool on wire rack.
- Store in tightly covered container.
- Makes 94 cookies.
