Potato Salmon Pie

  1. Boil and mash potatoes.
  2. Season with salt and pepper.
  3. Add butter and 1/3 to 1/2 cup evaporated milk to potatoes; stir well. Spread over bottom and sides of a 9-inch pie pan, building up a rim.
  4. Drain salmon; break into pieces.
  5. Spread half of salmon over crust.
  6. Saute green onions in some butter until tender.
  7. Blend flour, salt and dill weed in butter mixture.
  8. Gradually add milk; cook until thickened.
  9. Pour sauce over salmon.
  10. Top with half of cheeses.
  11. Layer rest of salmon, sauce and cheeses.
  12. Bake at 375u0b0 for 30 minutes.
  13. Serves 8.
