Shrimp Gumbo

  1. Fry bacon; remove from grease.
  2. Crumble and save.
  3. Fry okra until all slickness is gone.
  4. Remove from grease and add to bacon. Fry onions, celery, garlic, green onions, green pepper and parsley until limp.
  5. Add chili powder and mix well.
  6. Now add everything up to and including 6 cups hot water.
  7. Check list. Cover and cook slowly until mixture is thick, about 1 hour.
  8. Add raw, cleaned shrimp and cook 15 to 20 minutes.
  9. Add file, curry and olives.
  10. Leave out last 4 ingredients to freeze sauce.
  11. Serve over steamed rice.
