Herbed Spinach Soup (Crock Pot)

  1. In a crock pot, combine onions, parsley, lettuce, spinach, margarine or butter, salt, pepper, tarragon and broth.
  2. Cover.
  3. Cook on LOW 4-6 hours.
  4. Process in blender or food processor until vegetables are finely chopped.
  5. Turn crock pot to HIGH.
  6. Pour blended mixture into crock pot.
  7. Stir in half and half.
  8. Cover cook 20-30 mins on HIGH.
  9. Serve hot, garnished with chopped hard-cooked egg and a pinch of nutmeg.
